Blueberry Bagels

We’re pulling a recipe out of the vault! More than two decades ago, we partnered with a professional bagel baker to create the most amazing bagels in the world – forgive us for bragging! :bagel:

While we no longer make fresh bagels in the bakery, we’re sharing the classic recipe with you to enjoy plain or blueberry bagels. The key is using a high-quality bread flour and allowing the dough to rise and rest. How do you enjoy a fresh bagel? Cream cheese, topped with egg, or maybe avocado toast?

Ingredients

  • 2 C warm water (90 degrees)
  • 4 1⁄2 C bread flour
  • 1 1⁄2 teaspoons salt
  • 2 tsp instant yeast
  • 2 tsp granulated sugar
  • ¾ C blueberries (optional)

Directions

  1. Combine ingredients and mix for 10 min. If using blueberries, fold them in after mixing
  2. Let rise in oiled bowl for 1 hour, covered
  3. Transfer dough to floured floured surface and flatten into an 8 in rectangle
  4. Fold both sides and then the top and bottom to the middle. Flip over and place back in bowl to rest, covered, for 30 min
  5. Transfer to a floured surface and divide into 12 pieces
  6. Roll each piece to a 5-inch strand. Cover and let rest for 5 min
  7. Roll each strand 9 in long. Cover and let rest for 5 minutes
  8. Pinch both ends together to form a circle
  9. Place onto a greased baking sheet with 2 in between bagels
  10. Cover and let rise for 45 min and preheat oven to 450 degrees
  11. With a slotted spoon, blanch each bagel in simmering water for 45 seconds
  12. Bake for 12- 15 minutes until golden brown
