Ingredients
- 2 ½ Cups Kneaders Homestyle Buttermilk Pancake Mix
- 1 ½ Cups Water
- Zest of 1 Lemon
- ½ Cup Ricotta Cheese
- ½ Cup Egg Whites, whipped to stiff peaks
- 1 Cup Fresh Blueberries
- 1 Bottle Kneaders Famous Caramel Syrup
Directions
Heat large nonstick skillet to medium heat.
In a mixing bowl, whisk together the pancake mix and water. Add lemon zest and ricotta cheese and whisk thoroughly. Gently fold in whipped egg whites until well combined.
In the preheated skillet, ladle approximately ½ cup of batter onto skillet and cook for 1-2 minutes or until golden brown. Turn pancakes over and cook for another minute or until cooked through.
Place pancakes on platter and garnish with fresh blueberries and caramel syrup.
