Nana Noone's Irish Brown Bread

We’ve been enjoying Irish Stew and Bread this season, but it’s more than just a Kneaders tradition. ☘️ Watch our amazing Trish Noone share her family story and recipe for authentic Irish Brown Bread.

Trish was born and raised in Ireland, and this brown bread was passed down from her grandmother, Nana (Tilly) Noone. 🇮🇪 She even told us the secret to let the fairies out before cooking. We’re so grateful to share in this wonderful family tradition and enjoy the delicious recipe. Thank you, Trish!

This bread is made completely by hand, just remember Nana Noone’s saying: “You can taste your humor by the levity of your bread and how light you keep your hands.”

Ingredients

  • 1 pound of whole wheat flour
  • 1 pound of self rising flour
  • 1 Tbsp of wheat germ /flax seeds
  • 4 oz of butter
  • 2 eggs
  • 2 & 1/2 cups of milk

Directions

  1. Mix dry ingredients in a large mixing bowl
  2. Cut butter into slices and mix in to dry ingredients by hand
  3. Combine eggs and milk in a separate bowl
  4. Gently fold wet mixture into dry and mix by hand until dough is formed
  5. Turn dough onto liberally floured surface
  6. Form into round shape
  7. Cut a cross in the top of the dough
  8. Prick each corner of the bread to let the fairies out
  9. Place round on floured baking sheet
  10. Bake for 40-50 min at 365 degrees or until internal temperature reaches 190 degrees
  11. Enjoy fresh from the oven with butter
