Ingredients
- 3 Tbsps Kneaders Extra Virgin Olive Oil
- 2 medium onions, chopped
- 3 (14.5 ounce) cans diced tomatoes
- 3 cups chicken stock
- 12 ounces roasted red peppers, drained and chopped
- 1 cup basil pesto
- 1½ cups cream
- 1 (20 ounce) package tortellini
- Salt and pepper to taste
Directions
- In a large saucepan sauté onion in olive oil until translucent, about 10 minutes
- Stir in the diced tomatoes and warm to a simmer
- Stir in chicken stock and red peppers. Cover and simmer for 20 minutes
- Add the basil pesto and cream
- Ladle the soup into a blender, blend until smooth
- Return the soup to heat.
- Cook the tortellini to package instructions and add it to the soup
