Tortellini Soup

Is any soup and sandwich combo better than Tomato and Grilled Cheese? The memory takes us back to childhood lunches, and we decided to add a Kneaders twist to capture the magic. 🥣

Ingredients⁠

  • 3 Tbsps Kneaders Extra Virgin Olive Oil⁠⁠
  • 2 medium onions, chopped⁠⁠
  • 3 (14.5 ounce) cans diced tomatoes⁠⁠
  • 3 cups chicken stock⁠⁠
  • 12 ounces roasted red peppers, drained and chopped⁠⁠
  • 1 cup basil pesto⁠⁠
  • 1½ cups cream⁠⁠
  • 1 (20 ounce) package tortellini
  • Salt and pepper to taste⁠

Directions⁠

  1. In a large saucepan sauté onion in olive oil until translucent, about 10 minutes⁠
  2. Stir in the diced tomatoes and warm to a simmer⁠
  3. Stir in chicken stock and red peppers. Cover and simmer for 20 minutes⁠
  4. Add the basil pesto and cream⁠
  5. Ladle the soup into a blender, blend until smooth⁠
  6. Return the soup to heat.
  7. Cook the tortellini to package instructions and add it to the soup
