Zuppa Toscana

This Italian-inspired soup comes to us from Claudia Grover, who submitted it to our Facebook soup contest. Don’t let the simple directions fool you – this soup is filled with flavor and blew away our judges with its Italian sausage and kale.

We just had to pair this soup with a fresh slice of Rosemary Focaccia. We can’t think of a better combination for such a delicious soup.

Ingredients

  • 6 C chicken broth
  • 6 small potatoes, cubed small
  • 1 onion chopped
  • 1 lb Italian sausage (cooked & crumbled)
  • ½ C bacon bits
  • 1 C heavy cream
  • 1 C chopped kale

Directions

  1. Cook potatoes and onion in broth until tender
  2. Add cooked sausage, bacon and kale
  3. Cool slightly and add cream
  4. Serves 6-7
